This excellent fruit is composed by a wide range of sugar (14%), proteins (about 16%) and fats (over 60%). As a result we have a high nutritive value (100 gr. of edible hazelnuts produce more or less 700 calories).It is important to remember that over the 90% of this fat material is composed by two unsaturated acid fats (oleic and linoleic) that are very important for the human feed.

The hazelnuts are able to protect the tissues from the ageing because of their oil that has a similar composition of the olive oil.In the 1994, after the recognition of appellation protégéé (DOP), it was required the enrolment to the albo established in the Chamber of Commerce of Cuneo to control the production and the transformation.
